I googled some and now discovered a few books showing how to design aircraft or spacecraft as delta glider or XR Vessels

Aircraft Structures for Engineering Students - how to design fuselage structure with aerodynamics flow.
General Aircraft Aviaton Design: Applied Methods and Procedures - how to design many parts of aircraft as landing gears, wings, tails, etc.

I did not see any design about cockpit cabin design. Does anyone know any good book about cockpit cabin design?

You mean designing cockpit structure? I'm pretty sure basics, such as floor beams, etc., are covered in those books.

Most of other stuff like main instrument panel, overhead panel, etc. what are non-integral parts of the main structure, are designed for supporting required equipment/instruments within boundary conditions specified (e.g. max g), keeping their weight as low as possible.

See some examples of instrument panel structures attached.
