For Orbiter, there are the docs that come with the Simulator, of course. Once installed, go to Orbiter\Doc\ folder, start with Orbiter.pdf.
A good tutorial is 'Go Play In Space' by Bruce Irving, which can be read from the OrbiterWiki, beginning at https://www.orbiterwiki.org/wiki/Go_Play_In_Space
Also, go to https://www.orbiterwiki.org/wiki/Orbiter_related_videos, there are over 1900 videos on many aspects of Orbiter. You may consider David Courtney's Absolute Beginner Guide playlist, 43 videos for the beginner, and you could try TexFilms Orbiter Tutorial Series for Beginners, 7 more.
