Now....how to do "hot-staging" in my simulation?
Does this mean they won't do the little flip-up pitching manoeuvre for staging?

I really don't know. Maybe ask SpaceX.

But I can imagine, that the staging attitude stays similar for hot staging and that this could also be just needed for the test flight profile.

Probably so the NOTAMs can be limited in time, so disruptions to boats and planes can be also be limited.
