Well, when I think of Sauron in space, I think of the race of super humans from the Jerry Pournelle sci fi novels, who named themselves after the character from the Tolkien mythology. Unlike Sauron the evil one, the Sauron people actually fly in space, using their superhuman ability to handle high G's to their advantage in combat with human norms (or "cattle" as they call us). They also can see into the infrared, go without sleep for several days, eat raw meat, run like horses, and have exceptional strength and hearing.
Galen Deitinger is the main Sauron character in most of the Pournelle stories, his starship is called the Fomoria, and he and his ship would make fun add-ons.
